Watermelon and Feta Salad with Black Olives and Glazed Onions

In a large salad bowl, cut watermelon into small chunks and add crumbled feta cheese.
Cut onion rings and add lemon juice to it. Keep it aside for an hour.
Tear off the parsley and add it to the salad, add the black olives.
In a small bowl, whisk 2 table spoon of lemon juice from onion marinade, extra virgin olive oil, salt and pepper.
Pour the dressing over the salad and mix well.
Heat a flat pan and dry toast pine nuts until light brown.
Sprinkle toasted pine nuts over the salad.
To Serve: Garnish with feta cheese, parsley and top with dressing.
