Blanch the spinach leaves for 20 seconds in boiling, salted water.
Drain and squeeze out the excess water.
Add the blanched spinach leaves with all other ingredients in a blender to make a nice thick soup.
This can be served either warm or cold.
Serve in a nice glass and garnish with mint leaves.
