Vegetables with Grilled Squid

For the vegetables:
In a baking tray add the blanched carrots, onion rings, baby eggplants.
Sprinkle lemon juice, salt, coriander powder and black pepper.
Drizzle the paprika olive oil on top.
Bake for 10 minutes at 180-200 degree C.
For the grilled squids:
In a blender mix together the kiwiw, coriander and green chilli. Add a pinch of salt.
Add 2 tbsp of this mixture to the squid rings.
In a pan add olive oil and the marinated squid rings. Drizzle some lemon juice & fish sauce. Saute till cooked.
Add some chopped coriander leaves.
Plating up:
In a plate place the vegetables. Top it with the grilled squids.
Pour the rest of the kiwi sauce over it.
Serve.
