A simple and light salad that is a treat to your eyes and taste buds. Carrots, spinach and paneer tossed together with a light dressing.

Ingredients

  • For the Tri Colour Salad:

    100g fresh spinach leaves, washed and chopped

    1 carrot, peeled and grated

    100g paneer, chopped into 1cm cubes


    For the Dressing:

    1 Tbsp fresh lemon juice

    1/4 tsp salt

    1/4 tsp freshly ground black pepper

    1 Tbsp extra virgin olive oil

Method

Combine the spinach, grated carrot and paneer in a large salad bowl.

In a separate small bowl whisk the lemon juice with salt, pepper and extra virgin olive oil.

And just before serving, pour the dressing into the salad and toss well.
