Baked Sweet Potatoes with Blue Cheese Dip

Ingredients

  • For the baked fries:

    500 gms sweet potatoes (cut into wedges)

    1 tsp (10-15 ml) honey

    1/2 tsp paprika powder

    Salt & pepper to taste

    1/2 tsp olive oil

    Sprinkle some fresh thyme

    Chopped parsley


    For the blue cheese dip:

    50 - 60 gms blue cheese (here Danish Blue is used)

    10 ml milk

    30 ml mayonnaise

    Salt to taste (not too much as blue cheese is slightly salty)

    Pepper to taste

Method

For the baked fries:

Wash and cut the sweet potatoes into wedges. Mix in the rest of the ingredients, lay evenly on a baking tray.

Bake for 15-20 minutes in a moderate oven (around 175 degrees). Garnish with chopped parsley.


For the blue cheese dip:

Mix all the ingredients and blend.
