For the omelette:
In a bowl whisk eggs with salt and pepper.
In a pan add some oil and spread the egg batter making a thin omelette. Cook from both sides till golden brown.
Cut semi-thin strips from this omelette.
Top it on the spicy noodles.
For the noodles:
In a pan add oil, garlic, chilli and yellow bean paste. Saute.
Add chicken. Saute till semi cooked and then add prawns. Saute till cooked. Add a little water in intervals to help cooking the meat.
Add cabbage, celery, spring onion greens, salt and pepper. Saute for 1-2 minutes.
Add the noodles and toss. Add chilli sauce and soy sauce. Toss.
Serve hot topped with omelette strips.
