Spicy Singapore Noodles

Nikhil and Natasha whip up some spicy noodles with prawns and chicken. Topped with thin omelette strips, this dish is perfect for all the chilli lovers.

Ingredients

  • For the omelette:

    2 eggs

    Salt, to taste

    Pepper, to taste

    1/2 tsp Oil


    For the noodles:

    1 Tbsp oil

    6 cloves garlic, chopped

    3 chillies, chopped

    2 Tbsp yellow bean paste

    150 gm chicken breast, sliced

    150 gm prawns, slivered (Deshelled and de veined)

    Water

    100 gm cabbage, shredded

    50 gm celery

    Spring onion greens, chopped

    Salt, to taste

    Pepper, to taste

    1 big bowl boiled noodles

    1-2 Tbsp chilli sauce

    1-2 tsp soy sauce

Method

For the omelette:

In a bowl whisk eggs with salt and pepper.

In a pan add some oil and spread the egg batter making a thin omelette. Cook from both sides till golden brown.

Cut semi-thin strips from this omelette.

Top it on the spicy noodles.


For the noodles:

In a pan add oil, garlic, chilli and yellow bean paste. Saute.

Add chicken. Saute till semi cooked and then add prawns. Saute till cooked. Add a little water in intervals to help cooking the meat.

Add cabbage, celery, spring onion greens, salt and pepper. Saute for 1-2 minutes.

Add the noodles and toss. Add chilli sauce and soy sauce. Toss.

Serve hot topped with omelette strips.
