Soy Glazed Chicken with Lal Math Sauce

Pan fried chicken breast with a marinade of soya sauce and honey. Served with a beautiful lal math and coconut sauce.

Ingredients

  • For the lal math sauce:

    1 tsp olive oil/ sunflower oil

    1/2 onion, sliced

    1 tsp ginger, grated

    2 cloves garlic, minced

    1/2 green chilli, chopped

    1 small bowl washed lal math leaves

    Salt and pepper, to taste

    Juice of 1/2 orange

    4-5 Tbsp coconut milk


    For the chicken:


    3 chicken breast

    2 tsp soy sauce

    1 Tbsp honey

    Coriander leaves, chopped

    Salt to taste

    Pepper to taste

    2-3 tsp oil

Method

For the lal math sauce:

In a pan add olive oil, onions, ginger, garlic and green chilli. Saute.

Add the washed lal math leaves, salt, pepper, orange juice. Let the leaves cook.

Add the coconut milk. Cook for 2-3 minutes.

Transfer this in a mixie and blend.

Your sauce is ready.


For the chicken:


In a bowl mix soy sauce, honey, coriande rleaves, salt, pepper.

Rub this on the chicken breasts. Keep aside for 5 minutes.

In a pan add oil and lightly sear the chicken breasts. Cook each side for 3-4 minutes or till lightly brown on both sides.

Transfer this in the oven. Bake for about -9 minutes at 180 degrees C.

Once done, slice them and pour the lal math sauce over it. Serve with some sauteed vegetables.
