Ingredients

  • 5-6 Oysters or as many as you will serve

    5-6 sea prawns

    5-6 green mussels


    For the red chilli dip:

    1 tsp chopped garlic

    1 tsp chilli paste (Whole red chillies ground with a little water)

    1/4 cup water or stock

    1 tsp coriander stems, chopped

    1/2 tsp lemon grass

    2 tsp white vinegar

    1 tsp chopped basil


    To make the green chilli dip:

    8-10 green chillies

    1 tsp fish sauce

    1 tsp sugar

    2-3 tsp lemon juice

Method

For the red chilli dip:

Add all the ingredients and make a sauce over slow heat.

Add chopped basil leaves.


To make the green chilli dip:

Grind all ingredients into a paste.


Seafood:

Remove the head and de-vein the prawns.

Steam the prawns and mussels in their shells.

Serve all three starters with the dips.
