Salmon Goujons with Homemade Mayonnaise

These lovely salmon goujons make for an excellent starter. Rolled in bread crumbs these goujons are deep fried. Served with home made mayo with dill, gherkins and capers.

Ingredients

  • For the Dill, Gherkins and Capers Mayonnaise:

    1 egg yolk

    1 tsp mustard

    500ml of olive oil

    Juice of 1 lemon

    1 tsp dill, gherkins and capers; finely chopped


    For Salmon Goujons:

    2 fillets salmon

    1/2 cup flour

    1 egg

    1 cup bread crumbs or 2 cups panko

    Salt and freshly grounded pepper

Method

For the Dill, Gherkins and Capers Mayonnaise:

Separate 1 egg yolk from white in a bowl, add mustard and whisk using a hand held whisk.

Add few drops of olive oil simultaneously while the whisk is on.

Add the remaining olive oil in comparatively large amounts until the mix gets thicker in consistency.

Add lemon juice and whisk. Keep it aside.


For Salmon Goujons:

Cut salmon fillets in long strips.

Coat the goujons with flour.

Whisk an egg to bind the flour and egg to the goujons.

Roll goujons in bread crumbs / panko.

Deep fry goujons for about 2 minutes, or until golden brown.

Sprinkle salt and freshly grounded pepper over fried goujons.

To  Serve: Add freshly chopped dill, gherkins and capers to the mayonnaise. Sprinkle salt and pepper to the goujons.
