Prawns in Coconut Milk and Coriander

Jumbo prawns simmered in coconut milk, coconut water and a fragrant green paste. Served with steamed rice.

Ingredients

  • For the paste:

    1 green chilli

    2 kafir lime leaves

    1 Tbsp lemongrass, chopped

    1 knob ginger

    6-7 cloves garlic

    A bunch of coriander

    6-7 leaves basil

    2 Tbsp coconut water


    For the prawns:

    1 tsp oil

    1 spring onion, sliced

    1 Tbsp honey

    1 tsp fish sauce

    1/2 cup coconut milk

    1/2 cup coconut water

    4-5 jumbo prawns

    Juice of 1/2 lemon

    Fresh coriander, chopped

    1 Tbsp cream

Method

For the paste:

In a processor blend together all the paste ingredients. Keep aside.


For the prawns:

In a pan heat oil. Saute spring onions.

Add the paste, honey and fish sauce and the prawns. Let it cook.

Add the coconut milk and coconut water. Let it simmer.

Add lime juice and cream.

Garnish with coriander and serve with steamed rice.
