Ingredients

  • 1 Tbsp olive oil

    1 medium onion

    2 cloves garlic

    Few sprigs of thyme

    Few sprigs of sage

    Few sprigs of rosemary

    150-200 gms button mushrooms (sliced)

    Wild mushrooms (optional)

    2 Tbsp white wine

    1/2 tsp red chilli flakes

    1 Tbsp chopped parsley

    1 Tbsp butter


    White sauce:

    75 gms flour

    75 gms butter

    150 ml milk

    1 medium onion

    2 cloves garlic

    1 bay leaf

    300 ml cream

    Salt to taste

    Pepper to taste

    1 pinch nutmeg

    30-40 gms grated cheddar cheese

    30 gms grated gruyere cheese

    30 gms grated parmesan cheese

    150 gms macaroni half cooked 

Method

Heat olive oil and butter in a pan, add onions and garlic give it a good mix.

Add chilli flakes to the same pan and cook onions till lightly brown.

Add the sliced mushrooms, salt to taste.

Deglaze with white wine.


For the White Sauce:

Infuse the warm milk for sauce with onion, garlic, bay leaf & nutmeg.

Strain the milk just before using.

In another pan, melt butter & cook the flour till it just begins to change colour.

Add the infused milk, butter, cream, grated cheddar cheese and boil till the mix gets nice and
thick.

Put the pasta in hot boiling salted water until half cooked.

Coat the pasta with the mushroom mix & white sauce along with half the grated parmesan and gruyere cheese.

Put into a baking dish, top with the remaining parmesan and gruyere cheese, cracked black pepper and a few drops of olive oil.

Put into the oven for 15-20 minutes at 180°C.
