Chicken Mulligatawny Soup

Mulligatawny literally means pepper water and was invented by the Indian servants during the British raj. This version is made with chicken pieces, basmati rice, cream and pepper.

Ingredients

  • 50 gm butter

    1 small onion, chopped

    2 stalks celery, chopped

    1 carrot, diced

    1 1/2 Tbsp plain flour

    1 1/2 tsp curry powder

    1 liter (1 3/4 pints) chicken stock

    1/2 apple, peeled, cored and chopped

    4 Tbsp basmati rice

    1 skinless, boneless chicken breast fillet, diced

    1/4 tsp salt

    1/4 tsp freshly ground black pepper

    1 pinch dried thyme

    100 ml double or thick cream

Method

Melt the butter in a pan. Saute the onion, celery and carrot for 2-3 minutes.

Add the flour and curry powder and cook for 5 more minutes.

Add the chicken stock, mix well and bring to the boil. Then simmer about 1/2 hour.

Once done add the apple, rice, chicken, salt, pepper and thyme.

Simmer 15 to 20 minutes, or until rice is done. Stir in cream and serve.
