Slice up all the vegetables.
Put ginger, garlic, chilli and lemon grass with some water in a mixer and blend into a fine paste.
In a wok, put in the oil and heat till smoking hot.
Stir fry the paste and add all the vegetables, give it a good mix.
Season with salt, rice wine vinegar, sesame oil, black bean sauce and give it a nice toss for 3-4 minutes.
