Mutton bits added to gravy with a host of Indian spices and fenugreek leaves.

Ingredients of Methi Gosht

  • 1/2 kg mutton - cut into pieces
  • 1/4 cup oil
  • 1 Tbsp jeera
  • 2 tej patta (bay leaves)
  • 5 chhoti elaichi (green cardamom)
  • 1/2 tsp broken dal chini (cinnamon)
  • 4 laung (cloves)
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • 2 cups grated onions
  • 1/2 cup grated tomatoes
  • Salt - to taste
  • 1/2 tsp haldi (turmeric powder)
  • 2 Tbsp powdered dhania seeds
  • 1 tsp chilli powder
  • 1 cup finely chopped methi leaves
  • 2 Tbsp malai

How to Make Methi Gosht

Heat oil and add jeera, tej patta, elaichi, dal chini and laung.

When they splutter, add ginger, garlic and onions and saute over high heat till they turn brown in colour.

Add the tomatoes and stir-fry till the fat separates.
4.
Add salt, haldi, dhania and the chilli powder and mix well.
5.
Keeping the heat high, add meat and turn around till a little opaque.
6.
Lower the heat and let it cook, stirring off and on, till fat separates.
7.
Add some water and cook over low heat till tender, adjusting water as required.
8.
Add methi leaves and stir fry till the fat separates again.
9.
Garnish with cream and serve.
