Ingredients

  • 1 shredded lettuce

    1 melon-cut into cubes

    100 gm phalsa

    100 gm stoned cherries

    half a kg sliced cucumber

    1 tbsp mint leaves to garnish

    Dressing

    200 ml thick yoghurt

    half cucumber-chunked

    2 tbsp mint leaves

    grated rind of 1 lime

    1 tsp castor sugar

    4 ice cubes

    Crisp cheese toast


    1 loaf French bread - sliced and toasted on 1 side

    100 gm butter

    1 tsp garlic paste

    crushed black pepper

    200 gm sliced mozzarella cheese

Method

Arrange lettuce on a plate.

Place melon and fruit on top, followed by cucumber slices.

Blend dressing ingredients together.

Season well. Serve with salad.

For the cheese toast, mix butter, garlic paste and pepper together.

Spread over un-toasted side of bread.

Top with sliced cheese and grill until cheese melts.

Serve with salad.
