Garlic Flavoured Zucchini With Pasta

Ingredients

  • 3 Tbsp olive oil

    2-3 cloves finely sliced round garlic

    200 gm finely sliced round zucchini

    60 gm cluster beans (par boiled)

    1 tsp red chilli flakes

    12 cherry tomatoes

    1 Tbsp tomato puree

    180 gm cooked pasta

    20 gm feta cheese

    2 pieces buffalo mozzarella

    Small bunch chopped parsley

    1 pinch salt

    1 pinch cracked black pepper

Method

Heat oil in a pan, and throw in the garlic, once they start popping around throw in the zucchini.

Add the cluster beans, salt and pepper, red chilli flakes, cherry tomatoes and the tomato puree.

Stir well.

Add the pasta, give it a good toss so that the pasta is nicely coated with the sauce. Crumble feta cheese over the pasta with the chunks of buffalo mozzarella.

Garnish with chopped parsley and give it a final stir.

Serve hot.
