Cut the tomatoes into large rounds.
Whisk 1 egg in a bowl.
Fry the prosciutto in until crisp and keep aside.
Coat the tomatoes with egg-wash and flour, add salt and pepper to taste. Remove any excess flour.
Shallow fry the tomatoes till golden brown on both the sides.
Place the fried tomatoes in a round platter and layer them with chopped prosciutto.
To Serve: Serve with a dollop of sour cream and chives. Drizzle with extra virgin olive oil.
