Ingredients

  • 4 red snapper fillets

    Sea salt to taste

    Cracked black pepper to taste

    Lemon juice

    4 orange slices

    1/2 cup sliced fennel

    1/2 cup julienne of carrots

    12 black olives

    2 julienne tomatoes

    4 basil leaves

    1 tsp parsley

    1 tsp thyme

    2 shots olive oil spray

    4 parchment paper, for parcels

Method

Cut the parchment paper into 4 circles. Wash, pat dry the fish fillets. Season with salt, cracked black pepper, lemon juice, parsley and thyme.

Spray the paper with some oil, place the fillet on it and top each fillet with the carrots, fennel, tomatoes, basil, olives and another spray of olive oil.

Fold the paper and start twisting and crimping it as to seal the packages of fish. Place on a baking tray in a preheated oven and cook for 20 minutes.

Serve on a nice large plate and snip the package at the table.

Grind some black pepper from a mill over the fish.
