Velvety smooth and spicy soup of pumpkin garnished with cream

INGREDIENTS
  • For Cuban Pumpkin Soup:

    Ingredients:

    Butter 2 tbsp
    Onions (diced) 1 large
    Pumpkins (peeled & diced) 1 kg
    Green chillies 2 tsp
    Stock 1.25 litres
    Thyme 2 sprigs
    Salt & pepper (to taste)
    Cream 1 cup
    Garlic (chopped) 1½ tbsp
    Cream (for garnish) 1 cup
    Coriander powder ¼ tsp
    Cumin powder ¼ tsp
    Red chilli powder ¼ tsp
 
METHOD:
Method:

Sweat the peeled pumpkin along with the onions, red chillies, and fresh thyme in butter.

Add the stock and cook till all the veggies are tender. add the cream, season to taste.

Blend to a smooth puree.

Mix some cumin, coriander and red chilli powder, mix with cream and swirl it over the soup just before serving.
