Chicken Schnitzel, Chunky Fries and Chilli Mayonnaise

Bread crumb coated chicken breast fried crisp and golden. Served with baked chunky potato fries and a chilli mayonnaise to dip it in.

Ingredients

  • For Chunky Fries:

    1 large potato

    2 cloves garlic

    2 tbsp butter

    2 sprigs thyme

    2 tbsp olive oil

    Salt and pepper


    For Chicken Schnitzel:

    1 chicken breast

    1 egg

    Oil for deep frying

    2 tbsp flour

    1 tbsp red chillies (powdered and chopped)

    20gms panko bread crumbs

    1 tbsp mayonnaise

    1 tbsp curd

    1 lemon

Method

For Chunky Fries:

Cut the potato into large chunks, pat dry with a paper towel and spread them on a baking tray.

For marinade, in a mortar, take 2 cloves of garlic, grind it with a pestle until pulpy.

To the garlic pulp add butter, thyme,olive oil, salt and pepper. Mix well.

Coat the potatoes with the marinade using a brush.

Spread some thyme on the potatoes and drizzle some olive oil.

Bake in the oven at 200 C for 1 hour.


For Chicken Schnitzel:

Cut chicken breast into half.

Flatten out the chicken with a meat tenderizer or a rolling pin. Set aside.

For seasoning, take some flour, salt, pepper and chillies.

Coat the chicken with the flour mixture.

Whisk an egg and dip the chicken into it.

Now, coat the chicken with the panko bread crumbs completely.

Deep fry the chicken in the fryer for about 4-5 minutes or until golden brown.


For Mayonnaise Dip:


Mix 1 tbsp of mayonnaise, homemade mayonnaise and curd.

Add 1 tbsp chopped chillies, lemon juice, salt and pepper.

Mix it all together.


To Serve
: Serve chicken schnitzel with chunky fries and chilli mayonnaise.
