Ingredients

  • For Chicken Legs with Chorizo:

    2 chicken legs (whole)

    20 slices of chorizo

    2 onions

    2 parboiled potatoes

    1 red chilly

    50 gms butter

    Salt and pepper

    1 cup cherry tomatoes

    1 bunch rosemary

    1 bunch thyme

    1 bulb of garlic

    Olive oil


    For Garlicy Cheesy Beans
    :

    200 gms french beans

    1 clove garlic

    Olive oil

    Salt and pepper

    Handful grated parmesan cheese

    Preheat the oven to 200 degrees C.


    For Wasabi Mayo Dressing:

    3 Tbsp mayonnaise

    1 Tbsp wasabi paste

Method

For Chicken Legs with Chorizo:

Preheat the oven at 200 degrees.

Place the chicken legs in a baking tray.

Peel and cut the onions and potatoes into quarters and arrange them in a shallow baking tray with the chicken legs and the vegetables.

Stack the Chorizo slices together to make bundle and arrange them in the baking tray.

Add in one sliced red chilly.

Rub the butter the chicken legs.

Squash the bulb of garlic and Scatter it over the chicken and season with salt and pepper.

Scatter cherry tomatoes, rosemary and thyme in the baking tray and drizzle with  generous amount of olive oil.

Pop the baking tray into the preheated oven for 45 minutes.


For garlicky cheesy beans:

Steam the beans with a pinch of salt in boiling water for 2-3 minutes. Drain in cold water and set aside.

In a shallow oven proof pan, spread the beans and slices of garlic and drizzle with olive oil.

Season with salt and pepper and add grated Parmesan and put it in the oven at 200 degrees for 10 minutes.


For wasabi mayo dressing:

Put the ingredients in a small mixing bowl and whisk together.

Serve the chicken legs with beans and wasabi mayo dressing on the side.
