Broccoli with Onion and Garlic

Wash the broccoli thoroughly in cold salted water.
Cook it in boiling water for 2 minutes and drain.
Heat the vegetable oil in a wok and or large heavy-based pan.
Add the chicken, if using and fry for 5-6 minutes till it becomes opaque.
Tip in the onion and stir-fry for a minute. Tip in the garlic, chilli, and broccoli and saute over a medium heat for 5 minutes.
Stir in the ginger and peanuts. Add the soy sauce, black pepper, sugar and sesame oil (if using)
Mix well and serve the broccoli with noodles.
