How to store wine What are the factors that you keep in mind that will ensure that your wine will age gracefully with time?

Temperature
Wine should be stored on its side in a cool, dark place where the temperature is fairly constant - anywhere around 55 F (13 C) is just about perfect for preserving wines.

Position
Wine bottles should be stored on their sides to prevent the cork from drying and shrinking.

Acidity
One of the major factors in aging wines is acidity. Generally, a low pH (that means more acid), reduces the chances for the wine to be spoilt and betters the mellowing of the wine.

Humidity
As long as the humidity is in excess of 12%, which is the moisture saturation point for a cork, the cork will not dry out and humidity has no other effect on the ageing process.
